That's a Slow Roasted 55lb Suckling Pig (only fed its mother’s milk)

Here's how we prepared it  -
Brine: Apple Cider + Brown Sugar + Truffle Salt + whatever else, whatever herbs we all enjoy  (bay leaves, sage, herbs de provence, thyme, whatever). 
Stuffing: apple, onion, carrot, celery, garlic cloves
Inject: White Wine
Basting: balsamic, red wine, sherry vinegars.  Something with sugars..
