My first meal in Hong Kong was the impressive tasting menu at the 2 Michelin Star Amber by Richard Ekkebus. This is Modern French cuisine done without any butter and still flavorful. Their signature Uni Caviar dish was my favorite although the Fish course served inside the kitchen was a close second.
